Egg substitutes

If you have an egg allergy or just ran out of eggs in the the middle of baking, here are some things that work as an egg substitute:

To replace an egg:

  1. 1.5 tsp powdered Egg Replacer (like Ener-G) mixed with 2 TB water = 1 egg

  2. 1/4 cup nut butter = 1 egg

  3. 1 banana or 1/2 ripe banana = 1 egg

  4. 2 ounces tofu = 1 egg

  5. 1/4 cup apple butter

  6. 1/2 tsp guar gum

  7. 2 tbsp cornstarch = 1 egg

  8. 2 tbsp arrowroot flour = 1 egg

  9. 2 tbsp potato starch = 1 egg

  10. 1 heaping tbsp soy powder + 2 tbsp water = 1 egg

  11. 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg

  12. 1 tbsp milled flax seed and 3 tbsp water = 1 egg
